Method
Prepare the Base
Boil the chopped potatoes, onion, and garlic cloves in water until tender.
Blend the cooked vegetables completely until smooth, then return the pureed mixture to the heat.
Simmer and Serve
Add the finely shredded kale and chopped chouriço to the pot, simmering together for 10 minutes.
Remove the soup from the heat, drizzle with olive oil, and garnish with remaining chouriço slices before serving.
