Pierce the pork loin all over with a sharp knife and set aside.
Blend the onion, salt, lemon juice, olive oil, and garlic in a blender until smooth.
Rub the blended marinade thoroughly over the pork loin.
Roasting
Place the pork and marinade into a baking tray, top with bay leaves, cover tightly with aluminium foil, and bake in a preheated oven at 200°C for 30 minutes.
Pour 1/2 cup of water into the tray during roasting to create a base for the pan juices.
Check doneness by inserting a knife; the juices should run clear and the meat should feel tender.
Remove the foil, flip the pork loin, and continue roasting until beautifully golden, adding small splashes of water if the pan dries out.
Slice the meat and serve warm drizzled with the remaining pan juices.
