Traditional Welsh Complet
Originating from Wales, this classic comforting dish is a traditional staple highly popular in the Hauts-de-France region. It provides a generous source of protein and calcium from its rich, melted cheese base. Perfectly savory and satisfying, it pairs excellently with a crisp green salad or a side of french fries for a complete North-of-France style meal.

Method
Assemble the Base
Spread the wholegrain mustard evenly onto the slices of farmhouse bread using a butter knife.
Arrange the mustard-coated bread slices into individual oven-safe dishes or mini-cocottes, then layer one slice of ham on top of each.
Prepare Sauce and Bake
Melt the grated cheddar with the brown beer in a saucepan over medium heat, whisking continuously until smooth and fully combined.
Pour the melted cheese mixture evenly over the prepared ham and bread slices, fully coating them.
Bake in a preheated oven at 210°C for 10 minutes until the cheese topping is golden and bubbling.
Finish and Serve
Fry the four eggs in a separate pan while the cheese is gratinating in the oven.
Top each hot baked dish with a fried egg, garnish with chopped fresh chives, season with salt and pepper, and serve immediately.
Chef's Notes
